The small town of Modena, Italy has been aging trebbiano grape musts in wooden barrels since the 11th century. The result was an intensely sweet vinegar reserved mostly for visiting dignitaries and local competition. This Vecchia special reserve balsamic vinegar has been aged 12 years.
